Keto Chocolate Chip Cookies: Chewy and Delicious!
Say hello to my first successfulgluten free, keto chocolate chip cookies!
Gluten free baking is hard!
Especially when you will also only use healthy flours and ingredients! That said, now that I have a basic recipe that works, given time, I am sure I will only further improve on this one.
So, get excited if you are a chocolate chip cookie lover!
Now, let's talk about these cookies! First up, they are quite delicate. Most cookie recipes will call for a lot of butter. Not these! In fact, this is where the recipe kept breaking down on me. The difference of one tablespoon of butter changed whether the cookie completely flattened out and burned, or turned into wonderful chewy chocolate chip cookies. So, make note! Here comes the dip! Second, but probably the most important, they are chewy and delicious! Yum!
As for how they became keto, and how you can alter the recipe...
Almond flour and coconut flour became your go-to flours for these cookies. Then some Swerve for your sugar is used. And finally, Lily's gluten free no sugar added chocolate chips are included. Now, if you aren't on keto, and you want some pure sugary, high carb goodness then feel free to use regular chocolate chips and regular sugar. But be careful! Too much sugar and those cookies will flatten out again, just as too much butter does. Uh oh, I hate the whole cookie! Enjoy!

Ingredients
1 Cup Almond Flour
1/2 Cup Coconut Flour
1 Stick Unsalted Butter, Room Temperature, Softened
2 tsp Vanilla Extract
2 Egg, Large, Room Temperature
1/2 tsp Salt
1 tsp Baking Soda
Instructions
Add all ingredients except for baking soda and chocolate chips to a bowl and mix until evenly combined.
Add baking soda. Mix again until evenly combined.
Add chocolate chips. Mix once more, to spread out chocolate chips.
Line baking tray with parchment paper.
Roll cookie dough into 24 even dough balls.
Place on parchment paper-lined tray.
Pat down with two fingers to turn into small patties. Ensure there are at least two inches between each cookie.
Place in oven for 11 minutes at 350 degrees.
Makes 24 cookies.
Notes
For keto, the sugar alcohol content per cookie is 9 grams. This makes the net carb count for each cookie is 1.6 grams.
Cookies do not spread much as they cook, so you will want to pat down to a little bit smaller than you want the cookie to be.
