Easy Keto Italian Bread Crumbs with a Pork Rind Base

Growing up with homemade Italian food meant that Italian breadcrumbs were a staple in my house.
Perfect for chicken parmesan, or veal saltimbocca (my favorite dish), it was the Italian spices that helped that dish shine. It was pretty much mandatory to nibble on the fried, breaded chicken after it had been perfectly browned when I was preparing a breaded dish. Naturally, one of the things that was difficult for me when I moved to a zero-carb lifestyle was the ability to enjoy these types of foods. Once I discovered pork rinds, the world opened up again. As with most pork rind base recipes, I wasn't sure how it would taste when everything was put together. But I have found pork rinds to be surprisingly versatile in the bread substitute department. So, when I went off to make some keto Italian bread crumbs, I checked the back of the can of breadcrumbs I grew up with to see which spices they used.
It was surprisingly simple to replicate.
This recipe literally takes five minutes to make. Unless you are like me and don't think about using a grinder. Yeah, I definitely crushed these all by hand the first time. Not recommended!
I did tack on an extra five minutes in the recipe below to pull out all of the spices. There are a lot of them. But these really are super easy bread crumbs and perfect for a low carb lifestyle.
Ingredients
1 8oz bag Plain Pork Rinds
8 tsp Garlic Powder
2 tsp Onion Powder
8 tsp Dried Parsley
4 tsp Dried Thyme
4 tsp Dried/Rubbed Sage
4 tsp Dried Oregano
4 tsp Dried Basil
4 tsp Dried Rosemary
4 tsp Dried Marjoram
2 tsp Salt
2 tsp Ground Black Pepper
2 tsp Paprika
1 tsp Coconut Sugar
Instructions
Place pork rinds in a grinding apparatus (blender, coffee grinder, Vitamix, Cuisinart, etc).
Grind until you have very small, fine granules.
Add all of the spices and sugar.
Mix for a few seconds more.
Notes
If you do not have a grinder you can also place pork rinds in a ziplock and crush by hand, however this will take much longer. Then you would just stir in spices afterwards.
