Easy Keto Deviled Eggs - Just Four Ingredients!

 I've taken the deviled egg, and keto-fied it. And yes, I may have just invented that word.  This is one of those classic recipes you grow up with. Or at least it's one I grew up with. My mom always made these subtly sweet deviled eggs, that I could literally devour in minutes.  

And I did again.

 They lasted about a day after the photos, and then I chowed down on the sweet, whipped egg powdered in paprika. So good!  They really only take a few minutes. Unless you are spending time trying to beautify the way the yolk lays on the egg whites. And, they are made with just four ingredients: egg, mayo, paprika, and relish.   You can certainly spice it up with some freshly chopped tomato, crispy bacon, or perhaps some chopped jalapeño. However, I enjoy those sweet and simple deviled eggs that remind me of my childhood.

Ingredients

  • 12 Large Eggs, Hard Boiled

  • 3 TBSP Mayonnaise

  • 4 TBSP Sweet Relish, Gluten Free

  • 1 Tsp + Paprika

Instructions

  1. Boil eggs.

  2. Wait for them to cool before doing anything with them. You can also place them in ice water to work with them immediately.

  3. Remove shell carefully, so as not to break egg.

  4. Cut vertically in half.

  5. Place yolk of each egg in small bowl. If you squeeze the egg white gently, the yolk should pop right out.

  6. Set the egg whites aside.

  7. In bowl, add the Mayo and Relish to the egg yolks.

  8. Whip with a fork until smooth.

  9. Take whipped egg mixture and divide evenly among the 24 halves.

  10. Shake desired amount of paprika over eggs

Notes

  • You can add salt or pepper as desired. I added none.

  • Feel free to top with other items like freshly chopped tomatoes, chopped jalapeño, or crispy bacon.

  • You want the whipped eggs to not be dry, but also not be wet. Add more mayo or relish as needed.

  • For the relish, it is 3 TBSP Relish, and 1 TBSP of the juice.
