Butternut Squash Alfredo Sauce with Fresh Sage

 If you are looking for a healthier way to enjoy pasta in a creamy sauce, then look no further than this butternut squash Alfredo sauce! 

Let me start by saying, this butternut squash Alfredo is delicious!

 However, it is not your typical Alfredo.  For one thing, it is sweeter. This is because in this recipe, the cream that is normally used is replaced by the squash. So, while still super creamy, once pureed, it does change the flavor. 

Secondly, we have added some ingredients.

 Sage pairs so well with butter, butternut squash, and Parmesan, that it just had to be added to this sauce. You can add as little or as much as you want. Just know that sage is a potent spice, so if you add more than the recipe calls for, you may want to taste test as you go. 

Of course, who wouldn't taste test, right?

 Additionally, I have added garlic to this butternut squash sauce. Now, I know what you may be thinking... That Alfredo sauce does have garlic in it.  Actually, that isn't so of the traditional recipe. So, this is an extra. And it is marvelous!  

As for the rest of the ingredients for this Alfredo?

 I used the typical Parmesan, butter, salt, and pepper. And in the end you get an incredibly creamy, sweet, and mildly savory Alfredo sauce that is perfect to place onto pasta or dip bread into. Enjoy! 




Ingredients

  • 1 Medium Butternut Squash, Peeled, Cubed, Approximately 5 Cups

  • 1/2 Cup Grated Parmesan

  • 2 Large Garlic Cloves

  • 3 TBSP Buttery Spread, Moderate Fat

  • 2 TBSP Fresh Sage, Chopped

  • Sea Salt, to Taste

  • Ground Black Pepper, to Taste

  • 1 Smidgen Ground Ginger, Optional

Instructions

  1. Peel and chop butternut squash into cubes. Discard seeds.

  2. Boil squash on high heat until cubes are soft, approximately 20 minutes.

  3. Once soft, remove from heat and let cool for a few minutes. Discard water.

  4. Once cool enough, transfer squash to an emulsifier or blender.

  5. Add sage and garlic.

  6. Puree together until smooth.

  7. Transfer back to pot and place on medium heat.

  8. Add remaining ingredients and stir continuously.

  9. If you are unable to get Parmesan to fully break down, transfer back to blender after cooking for several minutes.

  10. Serve with your choice of pasta or bread.

Notes

  1. Be sure that you cook after pureeing, so that the garlic has time to also settle, as it is very potent.
